I love a good, simple recipe. The recipes you can most likely make without doing any shopping or stressing too much.

My second #Choctoberfest 2020 recipe is one of those.

The cookbook is Simply Nigella: Feel Good Food, written by goddess on Earth, Nigella Lawson, and the recipe is for Nutella Brownies. Four ingredients, about half an hour, and you’ve got gooey brownies for the whole family.

Weirdly, though, they taste more like there’s peanut butter in them than Nutella.

Just another goddess secret, I guess.

Nutella Brownies

Makes 16 squares

From Simply Nigella: Feel Good Food

Ingredients

  • 4 Extra Large eggs
  • Pinch fine sea salt
  • 1 cup Nutella
  • 1/2 tsp. confectioners’ sugar

  1. Preheat oven to 350°F and line the base and sides of an 8-inch square cake pan with parchment paper.
  2. Break the eggs into a mixing bowl, add salt, and beat (either by hand or in a stand mixer) for 5 minutes.
  3. Measure the Nutella into a microwave-safe vessel and microwave for 1 minute or until warm and slightly runny.
  4. Stir the Nutella, then pour in a continuous stream into the eggs.
  5. Pour the mixture into your prepared cake pan and bake for 17-20 minutes. The top shoujld be dry, and the middle should be tender, but set.
  6. Let brownies cool completely.
  7. Dust with confectioners’ sugar.
