I like to toy with the idea of going Paleo every now and again.
Being a Type 1 diabetic dictates that carbs aren’t good for me, so I like the idea of meat, fruit & veggies, and that’s about it.
I also have a profound love of kielbasa, since a good chunk of my background is Czech-Hungarian. My grandparents served kielbasa at many a family function, and I have a special place in my heart for it.
I chose this recipe and thought it would be…fine. It’s not fancy, it doesn’t have a lot of ingredients, and I thought it would be fine.
But it’s weirdly delicious. Like, seriously delicious.
Try this one if you’re wanting to cut out some carbs or impress a new Czech/Hungarian friend.
Smoked Sausage & Cabbage
Serves 4

Ingredients
- 1 kielbasa ring, cut into coins
- 1 head cabbage, thinly sliced
- 2 Tbsp. water or broth
- 2 Tbsp. bacon fat, olive oil, or ghee
- Preheat oven to 350°F.
- Grease a casserole dish with your choice of fat.
- Add the cabbage and water/broth to the casserole dish. Place kielbasa on top.
- Dot the ingredients with your choice of fat and cover dish with a lid or foil.
- Place dish in oven for 40 minutes, removing the cover after 30 minutes.
- Plate and serve.
