I love Chrissy Teigan. She’s kind of my spirit animal.
A lot of people find her controversial, or foul-mouthed, or whatever. She got into a small Twitter skirmish with that guy in the White House. It happens. (Especially when you’re provoked!)
If you don’t like swears, you won’t like her, but my god, I love her so much. I want to invite her and her family to my house to hang out and drink and eat delicious food.
One of my favorite things about her isn’t how hilarious she is on Twitter, but her cookbooks. Her first cookbook is mostly decadent insanity that I want to stuff in my face every day of my life.
Her second cookbook, Cravings: Hungry For More, is a slightly healthier tome, and I am here for it.
This first recipe is a delicious seared fish dinner that makes you feel good about your life choices. Thursday’s post is healthy-ish, and will definitely make you feel good about your life choices.

Pan-Seared Fish with Herby Browned Butter
Serves 2
From Cravings: Hungry For More
Ingredients
- 4 Tbsp. butter at room temperature
- 2 Tbsp. chopped cilantro, plus more for garnish
- 3 cloves garlic, finely minced
- 1 shallot, finely minced
- Salt & pepper to taste
- 1 lemon
- 1 Tbsp. canola oil
- 2 white fish fillets, 6-8 oz.
- Combine butter, cilantro, garlic, shallot, 1/4 tsp. pepper, and salt to taste in a small bowl.
- Zest the lemon into the butter mixture, combine, and set aside. Cut the lemon into wedges.
- Heat an unoiled skillet over medium-high heat. Pat the fish dry, then season with salt and pepper to taste.
- Add oil to the pan, let it heat up, then add the fish, skin-side down if your fish has skin. (I don’t use fish with skin. It grosses me out.)
- Let the fish cook for 3-4 minutes, then turn the fish over, add the herbed butter, and cook until done, about 3 minutes.
- Plate the fish and drizzle with pan sauce.
- Season to taste with salt & pepper, add more cilantro as garnish if you want, and serve with lemon wedges.
- Celebrate your life choices.
